I Promise To Blog More -- Baby Friendly Fish Pie

I got this recipe from the book Wholefood For Children by Judy Blereau. Tried it yesterday coz we should probably get Adam to start eating the same food as us now that he's 14 months, so I thought this would be a good introduction to him (and us!) Plus DH says he is okay with eating it too so that's always a plus.

Fish Pie (2 adult portions, 1 baby portion -- but fits nicely in 4 deep ramekins)

Ingredients




For the mash:

2 potatoes, diced 3/4" thick
100g brocolli, coarsely chopped ( I just used 1 brocolli head)
1 tbs butter or ghee
 -- I also added 1 small carrot for colour.

Filling:

1tbs butter or ghee
2 spring onions, finely chopped or 1 small onion, finely diced
zest of 1 small lemon
1/4 tsp wholegrain mustard
a handful of seasonal green vegetables -- peas/asparagus, cut into small pieces
1/3 - 1/2c creme fraiche/kefir cream ( I used cooking cream)
300g fish fillet, skinless, boneless, cut into 3cm pieces.

Method

1) Preheat oven 190C.
2) Steam potatoes and carrot for 5 minutes until nearly tender. Add brocolli and continue steaming for another 3-4 minutes, careful not to overcook the brocolli.
3) Place in a bowl and add the butter/ghee. Roughly mash and set aside.


4) Melt the remaining butter in a pan over low heat and cook the spring onions (1min)/onion (5mins), until soft. Add remaining ingredients and season. Stir gently, the cream will melt.

  
 


5) Spoon into shallow, ovenproof dish (or ramekins) and top with mash. I also added grated cheese on top for an extra crunch.

  

6) Bake for 20 minutes or until golden brown.
